A new fast-casual restaurant is in the works for the Cascades Overlook center in Sterling. It’s called Urbano Modern Italian and it will be taking over the free-standing building that the Colada Shop Cuban cafe used to call home.
Urbano Modern Italian describes the experience as more upscale than a typical fast-casual restaurant. Customers will order at a counter, but there won’t be dozens of hot and cold “wells” with food displayed. Instead, each dish will be prepared by a chef in the kitchen before being brought out.
The menu is still being finalized, but it will likely feature pastas such as Lobster Mafalda — large ribbon noodles with roasted tomato, lobster tomato ragu, asparagus and basil; and Gemelli Mushroom Bolognese — a twisted tube pasta with mushrooms, garlic, tomato and basil. There will be entrees too, such as Osso Bucco — a braised veal shank with white beans, tomato and gremolata; and Crab Cake Piccata – crab cakes with roasted potatoes, wilted greens and a lemon caper aioli. Other items include paninis, salads, family meals and more. There will also be wine, beer and even a limited cocktail menu.
People familiar with the location — Choolaah Indian BBQ, Abbott’s Frozen Custard, Burton’s Bar & Grill and Zoup! are all immediate neighbors — know that the building is modestly sized. There will be a handful of tables inside, more outside on the patios that surround it. And of course, carry out and delivery will also be a big part of the equation.
Urbano Modern Italian hopes to open for business in late October or early November.
