A new poke and sushi restaurant headed to Ashburn has unveiled the first look at its menu. We’re talking about Matsu Poke & Sushi, coming to the Cameron Chase Village Center.
That’s the retail shopping plaza by the Ashburn Ice House near the intersection of Waxpool Road and Smith Switch Road.
As The Burn first reported more than a year ago, Matsu Poke has taken a 1,400 s.f. space in the center.
Now, they appear to be close to opening. The restaurant has passed its health inspections and launched its website. That’s where we get our first look at the menu.
Appetizers include Crab Wontons, an Ahi Tower, and something called a Trio Carapachio, which has tuna, salmon, and yellowtail drizzled with yuza sesame ponzu sauce.
The main focus of the menu includes a poke bar where you can get curated poke bowls or build your own. And there is a sushi bar as well with a variety of rolls and other dishes.

It’s worth pointing out there is some mystery related to the actual name of the restaurant. The sign out front reads “Matsu Poke & Sushi.” But on the website, it uses two different names: “Matsupoke Sushi + Bowls” and “Matsutake Poke & Sushi.”
No official word on when Matsu will open, but it will likely be any day now. Stay tuned.
