A new French restaurant from a much-loved local chef is getting closer to opening day — and now we have new details on both the menu and the concept itself.
As regular readers know, Brasserie Royale is the highly-anticipated new restaurant from Chef Michael Stebner.
Along with his wife and business partner Allyson, Stebner is the founder of Local Provisions in the Cascades Marketplace shopping center in Sterling. LoPro — as we like to call it — opened back in 2023 to rave reviews and continues to be packed most nights of the week.
Now, Stebner has leased the 2,500 s.f. space immediately next door to his current restaurant. This spot is being transformed into Brasserie Royale.
The Burn shared artist renderings of the new restaurant last October and now — as an opening draws nearer — Stebner has shared new information and food photos of the upcoming boîte.
The menu will consist of “fun, French-y food.” Like at Local Provisions, a high premium will be placed on quality base ingredients that change with the seasons. It will be a little more high end than the LoPro experience, but still warm and inviting.
Menu items will likely include Steak Frites, Onion Soup, Escargot, Oysters, Shrimp Cocktail, Tuna Tartare, Trout Amandine, Filet au Poivre, plus desserts such as profiteroles and Crème Brûlée.
Classic cocktails like the Boulvardier, Vesper, and Sidecar will be on the list plus a wide variety of French wines.
As far as the ambiance they are going for? “Think the most incredible neighborhood brasserie, transporting our guests to a quiet street in Paris,” Stebner told The Burn.
