Some big news for Loudoun foodies, especially those in the Ashburn area. A new “old school” Italian restaurant is coming to town.
We’ve learned that Capellini’s Classic Italian is going to open in the Brambleton Town Center.
It will be taking over a roughly 3,500 s.f. space that was previously the Rebel Taco Cantina restaurant. This spot is immediately adjacent to the Brambleton Public Library.
Capellini’s is expected to have seating for 75 guests indoors and another 80 guests outdoors when the weather is nice.

Capellini’s is coming from the creative mind of Chef Mike Cordero. Cordero owns several restaurants in the region, perhaps most famously Carbonara in Arlington.
“Capellini’s will bring a smaller, intimate version of Carbonara to Brambleton, serving fresh pasta, old-school Italian favorites, our famous Parmesan wheel, and live weekend entertainment with Rat Pack-style music,” Cardero told The Burn in an email.

While the details of the Capellini’s menu are still being finalized, it will definitely include Cordero’s award-winning Chicken Parmigiana.
And that Parmesan wheel he mentioned – that’s a 40-pound wheel of Parmesan that is brought to the table, put to a flame to soften the cheese, and then rigatoni or other pastas are swirled in the melting cheese.

The lease for the restaurant was just signed earlier this week, so work on the space should get started soon.
As far as a target opening, no specific date has been identified yet, but Cordero says he’s aiming for sometime this coming fall.
